CINNAMON KITCHEN LONDON CALLING
Exciting news alert – I am working as a part time chef at the swanky Cinnamon Kitchen (part of the Cinnamon Club brand) in London. A long shift in a commercial kitchen with some very talented chefs makes for some solid learning experience! The cherry on the top has been meeting the master chef professional 2020 finalist Chef Santosh on day 1!
The last few weeks in the Cinnamon Kitchen have been exhilarating. Think of the word BIG. I am dealing with huge quantities, cooked in massive containers, using gigantic kitchen equipment to satisfy large groups of hungry customers. It is fast paced and hectic, and I am loving it!
I have recently completed my 1st 10 hour shift! Aside from prepping the usual onions (kilos and kilos), cleaning prawns (so many of them!) and learning to master a couple of curries, I have spent a good amount of time on the bread Tandoor station. The sheer joy of preparing an assortment of breads from garlic naans, aloo parathas, rotis to the famous peshwari naan, slapping these on to the super hot walls of the Tandoor clay coal oven (on the naan gaddi/ pillow) and watching the dough come to life, to taking them out with the long tongs, brushing them with hot butter and serving them nice and hot to the customers – it gave me such a high – made my day!
